I have 3 Fintech banks/EMIs with a DE IBAN: Vivid, Tomorrow and N26. Strangely, my Italian Paypal account also has a DE IBAN.Bunq doesn't have instant payments. I'll try Tomorrow too.
One thing non-EU people need to know about certain types of business in the EU is that EU rules meant to protect foreign citizens (even EU citizens) are often ignored. Eg IBAN discrimination is supposed to be illegal, an IBAN from another EU country is as valid as a domestic one, but that doesn't mean it doesn't happen.
