If you already own a company and it is sufficient for your needs, then maybe having another entity won't give you many benefits. Or you could try both and see which suits your needs better.

Could I invoice customers and they send fiat to my bank account and I then receive crypto to my wallet ? Would it be possible to receive USD from American accounts and businesses ?

That's not implemented yet, but the idea is to integrate the tool so that you can generate invoices under your Series name and get paid to your self-custodial vault either by crypto or by card (card payments would then be converted to crypto and deposited to your vault).

Likely, bank transfers will be included as well, so then your clients would be paying to our specified IBAN, and you would receive crypto.

There are countries where those letters are standard business, mainly Britsh and its (former) dependencies

Many others will understand what you need and an account manager will be able to issue such letter.
